Rungis International Market, south of Paris, is a wholesale market for fresh produce open only to professionals, among them retailers and restaurateurs. It describes itself as the world’s largest fresh produce market. Across 234 hectares, it was home to 1,198 companies in 2025. Its products fall into five sectors: fruit and vegetables, meat, seafood and freshwater fish, dairy and fine foods, and horticulture and decoration.

Laumont is a Spanish house specialising in truffles and mushrooms, founded in 1980. It sells them to restaurants, retailers, the food industry and private customers: fresh, preserved, frozen and dried truffles and mushrooms, and condiments.

Gérard Bertrand is a winegrower of the Languedoc and Roussillon. His estates count more than 930 hectares of biodynamically farmed vines, 830 of them Demeter-certified, and his headquarters is the Château l’Hospitalet, in the La Clape nature park, between Narbonne and the Mediterranean.

Kaviari is a family caviar house. It works with sturgeon farms chosen on three criteria: water quality, the welfare of the fish and feed certified free of GMOs and antibiotics. All its caviars then mature in its own laboratories, watched over by Bruno Higos, the house’s caviar master.

Palais des Thés is a tea house founded in 1986 by some forty friends, among them François-Xavier Delmas; its first shop opened the following year. The house lists more than 250 teas and infusions.

Médéric, the Paris hotel school, trains people for careers in cooking, pastry, service, wine, bar and hotel work. All its courses are taught through apprenticeship, and initial training there is free. The school has about 800 apprentices and 20 courses; its pass rate in the 2026 exams was 96%.
