Chef Guérard was the first great chef to work with the food industry, one of the first great chefs to open a bistro, he launched in 1996 with his Ferme Thermale the wave of spas that has since spread to hotels all over Europe, he was one of the first chefs to buy a vineyard (Château de Bachen), opened a second discreet hotel on the Atlantic coast - and remained faithful to his slimming cuisine.
