D’Silva grew up watching his grandparents blend taste, tradition, and knowledge from the many food cultures that come together in Singapore: “a long and organic assimilation of a multitude of migrant cuisines into a complex yet coherent whole.” He realised his culinary hotpot needed amplification and he has championed artisanal and authentic Singaporean cooking around the world for many years, becoming known as the “grandfather of heritage cuisine” on MasterChef Singapore. His current ambition at Rempapa is connecting with young diners by making Singaporean food heritage exciting and relevant.
